Food & Beverage Manager
Job summary
The Food & Beverage Manager is responsible for the overall management, profitability, and operational excellence of the restaurant’s food and beverage operations in compliance with the Ghana Tourism Authority (GTA) standards and the Food and Drugs Authority (FDA) food safety regulations. The role ensures strong revenue growth, effective cost control, staff discipline, and exceptional guest experience while aligning with Ghanaian labour and health regulations.

- Reduce pilferage and stock losses
- Control waste and over-portioning
- Prepare monthly P&L reports
- Drive spend-per-table growth
- Oversee menu pricing considering inflation and supplier fluctuations
- Supervise restaurant, lounge, and bar operations
- Ensure service standards align with middle-class and corporate clientele expectations
- Maintain proper service flow during peak periods (weekends, holidays)
- Ensure compliance with local assembly and health inspection standards
- Coordinate kitchen and front-of-house teams
- Approve and supervise stock ordering
- Conduct weekly and monthly stock counts
- Ensure FIFO (First-In-First-Out) system
- Monitor variance reports
- Negotiate with local suppliers for competitive pricing
- Ensure proper storage of imported and local products
- Recruit, train, and supervise F&B staff
- Enforce discipline in line with the Labour Act 2003
- Prepare staff rosters in compliance with labour hour regulations
- Conduct monthly performance reviews
- Coach staff on upselling and customer engagement
- Ensure high guest satisfaction standards
- Personally handle VIP and high-value customers
- Resolve major complaints professionally
- Build relationships with corporate and repeat clients
- Oversee service consistency
- Ensure compliance with FDA hygiene standards
- Maintain food safety documentation
- Oversee pest control and sanitation schedules
- Ensure staff medical screening compliance
- Diploma or Degree in Hospitality Management, Business Administration, or related field
- Minimum 6 years restaurant management experience in similar role (Ghana experience preferred)
- Strong knowledge of POS systems
- Experience managing high-volume weekend operations
- Strong financial and analytical skills
- Knowledge of Ghana hospitality regulatory environment
- Experience managing lounge + restaurant + poolside service
- Experience repositioning a restaurant to middle-class market
