About Us: Midunu Chocolates makes and markets handcrafted chocolates and other artisanal products. Our chocolates are made-in-Ghana by a small team of chocolatiers and each truffle features the flavors and unique spices of Africa. Through Midunu, we also offer dining experiences which highlight local ingredients and products.


We are a small and ambitious craft chocolatier with operations ranging from production, domestic fulfilment, international logistics, corporate and special events for clients, chocolate tastings, development of seasonal products, procurement of packaging, inventory management, and bespoke product collaborators across multiple revenue channels (online, corporate, experiences, and retailers). We're in an exciting time of growth in our company, and we are seeking long-term, committed and enthusiastic team members for growth and long term sustainability.



Responsibilities

Chocolate

  • Production of chocolate truffles

- Tempering chocolate

- Molding chocolate

- Piping ganache

- Polishing and cleaning molds

  • Packing chocolate
  • Taking inventory
  • Fulfillment of client orders
  • Know all steps in the truffle/bonbon making making process, from making ganache, to tempering chocolate to molding truffles, and packaging finished products.
  • Casting, filling, and sealing moulded chocolates
  • Clean and polish chocolate molds regularly.
  • Package chocolate products to help maintain the flow of production.
  • Setting up, dipping, and packaging chocolate turtles
  • Maintain inventory and batch information.
  • Maintaining production logs;


General

  • Keeping the kitchen clean and organized
  • Managing inventory
  • Receiving of goods
  • Executing standard operating procedures for kitchen and facilities management and food safety
  • Maintain Midunu’s standard of excellence, which is that every customer deserves, and is paying for, a high quality item and that each item is a reflection of the brand.
  • Any other related duties as needed and assigned by production supervisor
  • Properly storing and labeling finished chocolates and ingredients;
  • Maintaining a clean and organized work area, including cleaning the kitchen at the end of each day (to include dishwashing, equipment cleaning, and floor cleaning duties);
  • Complete Food Handler Safety course (provided for as part of on-the-job training)
  • Cleaning chocolate tools and equipment
  • Performing shift start and end checklists to ensure the kitchen stays clean and production runs smoothly
  • Assist in receiving deliveries of raw ingredients
  • Clean work stations & equipment throughout the day


Required Qualifications:

  • Minimum of 1 year practical experience working in chocolate production
  • Be able to communicate in English and clearly with managers and kitchen personnel
  • A minimum of 1 year practical experience chocolate production.
  • Have basic knowledge of roles, responsibility and duties in food production or food manufacturing
  • Must be comfortable following detailed recipes, directions & production schedules.
  • Driven and hard-working
  • Must be detail-oriented
  • Ability to take direction and multi-task
  • Ability to to repetitive tasks quickly and accurately
  • Must have or be cleared for food handler’s certificate
  • Be able to reach, bend, stoop, and occasionally lift up to 50 pounds.
  • Ability to stand for 8+ hours throughout a shift
