Job Description/Requirements
Key Responsibilities:
- Prepare, marinate, and season all meat and protein products according to established recipes.
- Master the use of commercial grills and barbecue equipment (e.g., smokers, charcoal grills, flat-tops).
- Cook meats to precise temperatures and doneness (rare, medium, well-done) as specified by the guest.
- Monitor grill temperatures and adjust to ensure consistent cooking and charring.
- Manage ticket times efficiently and communicate with the kitchen team to ensure hot food delivery.
- Maintain the cleanliness and maintenance of the grill and barbecue area.
- Adhere strictly to food safety and handling regulations, especially concerning raw meat.
Qualifications:
- Essential: Proven, specific experience operating commercial grills, smokers, or barbecues in a high-volume setting.
- Deep knowledge of various meat cuts and cooking times for optimal flavor and texture.
- Ability to handle a high-heat, high-pressure cooking environment.
