Assistant Food and Beverage Cost Controller

Responsibilities:

•  Issues accountable documents to Food and Beverage outlets (Captain Order Booklets.)
• Maintains a Control Book to ensure that all Captain Orders are properly accounted for.
• Ensures that bills have copies of the Captain Order attached.
• Ensures that all Food Orders to the kitchen are traced to the bills and properly accounted for. 
• Ensures that all Food Orders to Kitchen are placed in a box with key locks and the keys kept by controllers only.
• Ensures that discrepancy notice between the orders and bills are immediately reported to the Head of Finance Office with all the necessary report and evidences for action.
• Ensures that daily stock is taken with a preprinted stock take sheet at all the outlets with a staff from the outlets and both should sign the sheet to confirm the figures.
• Ensures that daily Food and Beverage Potential Cost Reports are prepared and submitted to the Head of Finance’s Office by close of Business daily.
• Undertakes weekly spot checks and till crashes at all the Food & Beverage outlets and record the results in a Control Book.
• Undertakes weekly Hydrometer Test in all Bars and record the results in a Control Book.
• Undertakes monthly stock take as directed by the Head of Finance.
• Undertakes weekly spot checks on all Food & Beverage stores and record the results in a Control Book.
• Prepares monthly Food & Beverage reports, Container, and Tobacco cost report and the final copies submitted to the Head of Finance’s Office by the 5th working day after the end of the month.
• Ensures that all Complimentary and Management bills are analyzed and reported to the Head of Finance’s Office by the 5th working day after the end of the month.
• Compiles competitor’s comparative report and ensures they are completed by the 5th working day of each month.
• Ensures that all Banqueting Charges are accurately invoiced by the Banqueting Department.
• Ensures that cash bars at all Food & Beverage functions are properly controlled and monies and stocks are accounted for. 
• Ensures that monthly stock reconciliation is done after the posting of the closing stock figures, and files all variance sheets with explanations

Requirements:

•  A minimum of HND in Accountancy
• A minimum of 3 years’ experience in a similar position in a 4-5 star Hotel will be an advantage
• Must possess firm knowledge in Material Control System, as well as Opera and micros operations
• Ability to understand and operate quasi-accounting models e.g. investigating accounting fraud
• Ability to communicate effectively both verbal and written
• Honesty and high sense of integrity is key - Analysis of consumption data
• Ability to control Food & Beverage stock in all the bars and stores
